Fall Season Calls for Pumpkin
School started, the weather cooled off and pumpkin spice lattes are back, baby. Pumpkin is so versatile in recipes; the texture is perfect for a thick coffee creamer or a fluffy pancake. My favorite way to use it, is in a latte. With a few ingredients, it tastes just as good as a pumpkin spice latte from Starbucks.


Back to School
Does anyone else work in the education field? The past few weeks have been crazy busy with back to school events so I haven’t posted in a while. I’m a school counselor at a middle school and I absolutely love it. I love making an impact every morning when I say ‘good morning’ or ‘have a great day!’. I know, so cliche right?! But I truly enjoy turning a kid’s day around; it never feels like “work”.
Pumpkin Spice Latte (PSL)
The other morning, I had time to make a quick pumpkin latte. I used pumpkin spice, maple syrup, oat milk and pumpkin purée for flavor. Then, I blended it with a handheld frother, poured two shots of espresso, added steamed milk to the mixture and that’s it! An open can of pumpkin will last for three days in the fridge if kept in a sealed container. If you prefer cold lattes, simply add ice and pour cold oat milk at the end.

Recipe:
Ingredients:
- Two shots espresso
- 1/2 cup warm milk frothed or cold milk
Mixture Ingredients:
- 1 tbsp pumpkin
- 1 tbsp maple syrup
- 1/4 cup milk
- 1/2 tsp pumpkin spice
Instructions:
Hot:
- Froth mixture ingredients
- Pour two shots of espresso into the mixture
- Froth warm oat milk and pour over your latte.
Cold:
- Froth mixture ingredients and pour over ice
- Pour two shots of espresso into the mixture
- Pour cold oat milk on top
